Boiled fillet of beef with stir-fried broccoli and potatoes

Ingredients
  • 1 kg Boiled fillet of beef (well-preserved rump cap of beef)
  • 2 Tablespoon Sea salt
  • 300 g Potatoes
  • 1 kg Broccoli, chopped into small pieces
  • 50 g Parmesan, finely grated
  • 3 Piece(s) / Portion(s) Cloves of garlic, cut into thin slices
  • 1 Teaspoon Salt
  • 0.5 Teaspoon Freshly ground pepper
  • 2 Tablespoon Cooking oil
Preparation
  1. Preheat the grill in the Standard position for 5 minutes at the medium level, keep the lid closed.

  2. Get all of the ingredients ready.

Cooking
  1. Rub a generous amount of salt into all areas of the meat. Place the meat onto the preheated grill and insert the Gourmet Check.

  2. Grill the meat at the lowest level until a core temperature of 56 °C is reached (medium cooking level). Remove the boiled fillet of beef from the grill and cover with foil.

  3. Increase the temperature and place the potatoes on the grill plate.

  4. For the stir-fried broccoli add the oil, broccoli, garlic, Parmesan and salt and pepper to the grill pan and cook at a medium heat with the lid closed for approximately 20 minutes.

  5. Remove the broccoli from the grill, increase the temperature and sear the meat on both sides at the highest cooking level.

  6. Grilling

Tip
  • First cover the grilled meat in baking paper and then wrap it in aluminium foil.

  • The broccoli can be prepared on the side hot-plate and the meat can be seared on the Steakhouse Burner when using the Lugano gas kettle barbecue.
